Crop rotation for new sowing is going to be key in keeping a line of production going in the garden throughout the season. For example, when the beets are ready for harvest in August replant the same row (aka rotate) with a new row of lettuce, spinach, or onion. During the same time you will want to completely harvest your rows of lettuce and replant with a new crop of beets, carrots, or cabbage. As you can see there is a lot of possibilities to play around with once your Summer harvest is ready to replant a new crop for Fall harvest, the key is to first rotate the rows and then plant a companion next to the rotated crop. The first rotated crop in this example would be the planting of lettuce, spinach, or onion where the beets were harvested; all of these following seeds are companions to the beet, maximizing the benefit of the soil conditions that the beet crop left behind. A way to simplify this method is to simply rotate what is companion planted next to the harvested crop (in this case lettuce) and to then harvest and replant the neighboring lettuce with either the same companion crop (beets) or a new companion crop such as carrots or cabbage to add variety to the season's harvest.
